The Beverage Air SPE48HC-10 Elite Series® prep table holds ten sixth-size, 4-inch-deep pans in the top rail. These pans are included, and ingredients held in them can be prepped on the 10-inch-deep cutting board. Forced air from the evaporator circulates under the pans to keep ingredients above freezing and below 41 degrees Fahrenheit. A hood and lid keep cold air around the pans while preventing contaminants from reaching them.

Wire shelves in the refrigerated base hold additional ingredients; this design enables air circulation to keep products properly cool between 36 and 38 degrees Fahrenheit. Since the shelves are coated in epoxy, they are resistant to corrosion. Self-closing cabinet doors keep cold air inside the Beverage Air SPE48HC-10 prep table, while the stay-open feature past 120 degrees simplifies cabinet cleaning and product loading. These doors are reversible in the field and removable to facilitate cleanup.
