The Beverage Air SPED72HC-18C-6 prep table accepts 18 sixth-size, 4-inch-deep pans in its two top openings. These pans are included and, with a polycarbonate construction, they resist dents and scratches. Ingredients in the pans are chilled by forced air from the evaporator; this air flows under the pans to provide efficient and consistent cooling. The hood and lid assembly keep cold air contained and protect the food from airborne contaminants. For convenient prepping and plating, there is a 17-inch-deep cutting board covering the front of the unit.

Pans measuring 6 inches deep are accepted by the six pull-out drawers in the front. The drawersa€™ frames are made of strong stainless steel. The telescoping slides lock to prevent the drawers from being accidentally jerked out of the cabinet. The Beverage Air SPED72HC-18C-6 prep tablea€™s exterior is constructed of heavy-duty stainless steel and galvanized steel. An aluminum lining helps prevent corrosion on the interior. The rear-mounted refrigeration system is protected from debris and spills that can cause damage. R290 hydrocarbon refrigerant is used by the system to produce the cold temperatures.
