For hot operation, users can raise the pan rest so foods are closer to the elements in the sides, and for cold, they can lower the pan rest, nestling pans deep within the cold wells. The controls are simple to use with a hot/cold/off switch and, because they are in a remote box, they can be placed in an accessible area.

With a stainless steel top and liner, this Delfield N8643P drop-in hot and cold food well resists scarring, denting, and corroding. It is also quick to clean, so any dribbles or spills on the top can be wiped off. At closing, moisture can be released out the drain, where the drain screen strains contents, preventing the line from clogging.
