The unit’s top accommodates 18 sixth-size condiment pans under two removable insulated lids. A 9¹/₂-inch-deep polyethylene cutting board with side rail runs along the front, supporting prep tasks like slicing and assembly. Its stainless steel construction and galvanized steel bottom are designed for routine commercial use.

Outfitted with a digital monitoring system and external display, the Turbo Air PST-72-D6-N sandwich/salad prep table ensures accurate temperature control between 33 and 39 degrees Fahrenheit. The four drawers provide flexible storage configurations. The rear-mounted compressor uses R290 hydrocarbon refrigerant, and the self-cleaning condenser keeps coils clear of debris to support system longevity.
