It is insulated with high-density polyurethane foam, which adds structure and helps retain temperatures from 33 to 39 degrees Fahrenheit. Its condenser cleans itself daily to reduce dust accumulation, and a forced-air system circulates air efficiently around the pans to keep food at or below 41 degrees Fahrenheit. The Turbo Air TST-28SD-12-N-SL sandwich/salad prep table has a 9¹/₂-inch-wide cutting board for prepping sandwiches and salads. This unit comes with (12) 4-inch-deep, sixth-size food pans and four 4-inch-diameter swivel casters. A digital display enables the user to monitor and control temperatures.
