Staff can flip the Wells HRCP-7500 dual-temperature well's switch to initiate cold or hot operation. When appetizers, entrees, or desserts need to be held at cool temperatures, its air-cooled, self-contained refrigeration system uses R404A refrigerant to produce desired temperatures; its large compressor expedites cooling. To ease maintenance, this system includes a sight glass, service valves, a dryer/filter, a receiver, and a removable condensing unit. The wet heating system automatically fills the pan with water, while an electric immersion heating system warms water to the temperature operators set on the positive-off thermostat controls. To eliminate manual refilling, its water sensor and solenoid value maintain high water levels.

The Wells HRCP-7500 hot and cold unit can be dropped in a 72³/₄-inch-wide by 25⁷/₈-inch-deep cutout for a seamless appearance on food bars. For convenient temperature adjustment and monitoring, the temperature and function control panel is attached to a 24-inch-long flexible conduit that enables installation in a convenient location. Made of stainless steel, this 74-inch-wide by 27¹/₈-inch-deep by 25¹/₈-inch-tall unit resists rust, corrosion, and wear, ensuring lasting durability through front- or back-of-house use. To maintain generated temperatures, it's foamed in place with CFC-free insulation. As many as five 12-inch by 20-inch pans can be displayed on this unit, which features adapter bars to enhance organization. For simple cleanup after use, residue can be removed through the 1-inch center drain.
