A pressure gauge and illuminated start and reset control switches built onto the console enable users to manage the unit's operation. Both kettles have a needle-style steam control valve, and the steam boiler's water level controls are adjustable. A 24-kilowatt electric steam boiler supplies the necessary steam to heat the two 6-gallon kettles' two-thirds steam jackets for uniform cooking. If the generator's water levels drop, it shuts off automatically. The steam boiler drains under pressure after each shutdown, while its water refills upon startup automatically.

To organize operational components in a single space, the Cleveland 36EMK6624 cabinet assembly is mounted on a 36-inch-wide cabinet base; a hot and cold water faucet is integrated onto the cabinet's surface. Significant components are serviceable from the front of the unit for flexible installation. The cabinet's stainless steel exterior resists rust and corrosion to extend the unit's service life.
