Both of the Cleveland 36GMK66300 kettle cabinet assembly's steam kettles have 6-gallon capacities, which is ideal for heating soup, rice, pasta, and sauce. Two-thirds steam jackets encase the stainless steel kettles for even heating, while a 220,000-BTU, gas-fired steam generator built into the unit supplies the required steam to fill the jackets. Operators can track the kettles' pressure gauges and start and reset the units as needed with switches on the front console. The steam generator's water levels also can be managed; if water levels drop unexpectedly, the unit powers off to prevent damage. Once product is ready to be served, users can grab the kettles' handles and tilt the units manually, dispensing desired amounts.

To streamline operation, the Cleveland 36GMK66300 kettle cabinet assembly's kettles are mounted on a 36-inch-wide cabinet base, which includes a hot and cold water faucet with a swing spout, a table top, and a backsplash. When the unit shuts down, the steam generator drains automatically and refills with water upon startup.
