This Cleveland KDL100F steam kettle is a direct-steam model, so it requires an external boiler or steam generator to fill its steam jacket. It can be connected to a steam source that measures 30 PSI of pressure. Because it has a 100-gallon capacity, it's ideal for warming soups, rice, and gravies for busy restaurants. A full steam jacket incorporated into the kettle eliminates cold spots for even results; it heats faster than the two-thirds steam jacket design. To preserve heat and protect product from contaminants, it features a hinged, spring-assisted cover.

Throughout heating, excess liquid can be released from the Cleveland KDL100F steam kettle's 2-inch-diameter draw-off valve, which is equipped with a drain strainer. Designed for longevity, the interior is type 316 stainless steel, while the exterior is finished with type 304 stainless steel; these metals resist rust and corrosion throughout high-volume use in busy kitchens, and they're simple to clean. Supported by an open base with three legs, the unit is stabilized in place, and its flanged feet can be bolted to the floor for security.
