Encased in a two-thirds steam jacket, this kettle can heat product uniformly. Its direct-steam configuration requires an external source to supply steam to the jacket, so it's ideal for kitchens with an external boiler or steam generator that can support the jacket's 35-PSI rating. Once product is cooked thoroughly, users can dispense it by tilting the kettle, enabling product to move over the high-capacity pouring lip for smooth removal.
