The Cleveland KDT12T kettle uses direct steam to heat its two-thirds steam jacket, making it compatible with kitchens equipped with boilers or steam generators that can supply steam pressure between 5 and 45 PSI. Because the jacket surrounds foods, it creates an even heat distribution that reduces cold spots or burning. Operators can adjust steam using the right-handed steam control valve built into the trunnion. When product is ready to be removed from the kettle, it can be tilted using the right-handed tilt handle. This lets users monitor the speed at which product is released from the large pouring lip to prevent splashing and spilling.

For improved user control, the Cleveland KDT12T kettle has a tabletop design and measures 19 1/2 inches wide by 20 1/4 inches deep by 29 inches high.
