To improve hands-on oversight on cooking progress, the Cleveland KDT20T kettle has a 23 3/4-inch-wide by 27 1/4-inch-deep by 33-inch-high structure to fit on countertops. The exterior features a stainless steel finish that resists rust and corrosion, while the 316 stainless steel interior withstands repeated heated and cooling. Its 20-gallon capacity is compatible with low- and medium-traffic restaurants that want to cook pasta, rice, stew, and soup in one batch.
Because the Cleveland KDT20T kettle is a direct-steam system, it can be used in kitchens with external boilers or steam generators that supply between 5- and 45-PSI of steam pressure. This steam heats the steam jacket, which encases two-thirds of the kettle for uniform cooking results. Operators can use the right-handed steam control valve built into a trunnion to adjust steam pressure levels to accommodate various foods. Once food is cooked, users can grip the right-handed lever and tilt the kettle to pour product from the large pouring lip. For versatility, the tilt handle is interchangeable for left- and right-handed operation.
