For even mixing, the Cleveland TMKEL40T twin mixer kettles have an agitator and a scraper with adjustable speeds from 0 to 320 rotations per minute and 0 and 40 rotations per minute, respectively. Powered by hydraulics and mounted on bayonets, these high-power components can be removed after use for cleaning. Integrated safety mechanisms, such as no high-speed starts and halted mixing when the mixer bridge is raised, help prevent splattering and potential injury during operation. After product is mixed evenly, the kettles can be tilted forward with roller bearings; locking in place, the kettles drain product from their large pouring lips. Users also can remove broth and water from the kettles using the 2-inch-diameter draw-off valve near the bottom of each 40-gallon-capacity kettle.

This Cleveland TMKEL40T electric mixer kettle's exterior is made of rust-resistant stainless steel while the interiors have a 316 stainless steel lining that defends against damage from acidic products. A 2/3 steam jacket surrounds the kettles, heating product evenly with the self-contained treated water system. Once product is mixed and heated uniformly, users can program solid-state temperature controls to maintain temperatures within a 1-degree-Fahrenheit range for proper simmering. Adjustable to account for irregular flooring, its feet are flanged to be bolted to the ground, securing the unit in place. Measuring 99 inches wide by 39 inches deep by 57 3/4 inches high overall, this unit has kettles with a 40-gallon working capacity each.
