Measuring 22⁷/₈ inches wide by 33¹/₄ inches deep by 67⁵/₈ inches high, the BevLes HPC-6836 full-size heated proofing cabinet holds (36) 18-inch by 26-inch pans. For easy interior access, this unit has one clear Lexan door, and the cabinet is made of anodized aluminum for corrosion resistance. This unit is mobilized with its four 5-inch casters, two of which brake for stability when needed. To protect the cabinet from collision damage during transport, it?s built with corner bumpers.

The BevLes HPC-6836 heated proofing cabinet features two separate modes: the heating mode maintains temperatures as high as 180 degrees Fahrenheit, while the proofing mode provides temperatures up to 115 degrees Fahrenheit and humidity between 30 and 95 percent. Operators can adjust the holding temperature with the dial control, and the removable control drawer streamlines thorough cleaning. For consistent results, the interior conditions are continuously distributed throughout the cabinet with the use of forced-air circulation and an air baffle.
