Its digital roast-and-hold control system allows precise programming of cook time, cook temperature (80°F–325°F), and hold temperature—ensuring perfect results whether you're smoking brisket, ribs, poultry, vegetables, or specialty items. Once cooking is complete, the unit automatically shifts into hold mode to maintain optimal serving temperature without overcooking.
Powered by a 4500-watt main heating element, the SC-200 delivers fast recovery times and reliable heat distribution across all five racks. Inside, two independent 300-watt smoker elements feed dual chip boxes, creating rich, even smoke production with the option to operate one or both depending on your flavor intensity. You can use the unit with or without sheet pans, giving you complete flexibility for your menu and workflow.
