Useful for high-volume loads, the Cleveland 24CEM24 pressureless electric steam generator holds six full-size pans and includes a bypass switch for constant steaming, even if the door is opened. Operating with convection jets, the unit’s two insulated cooking compartments have coved corners to assist in uniform heating. A 60-minute timer, switch for constant steaming, and cold water condenser are implemented on each compartment for user control. Designed for spontaneous use, instant steam standby mode keeps the generator at a steam-ready temperature. After use, it automatically drains, and a water jet sprays off the drain to ensure it’s not blocked for future use.

The Cleveland 24CEM24 steam generator’s door and steam cooking cavity have a 14-gauge stainless steel construction to withstand the stress that comes from opening and closing doors and loading and unloading foods in a bustling kitchen. Each section is equipped with a left-hinged door that won’t get hot during steaming, and they securely close with the reversible door gasket. Beneath the cooking areas, a cabinet with a hinged door holds frequently used items, such as pans or dry ingredients. To account for uneven surfaces, the unit is supported by 6-inch stainless steel legs with flanged feet that can be adjusted as much as 1 inch.
