To ensure the Cleveland TMKEL100T electric twin mixer kettle is secured in place throughout operation, it's stabilized on adjustable, flanged feet designed to be bolted into the ground. This 117 7/8-inch-wide by 47-inch-deep by 62 1/4-inch-high structure's exterior is made of corrosion-resistant stainless steel, while each kettle's interior is lined with 316 stainless steel that defends against damage from acidic products. Both kettles are encased in 2/3 steam jackets filled with treated water. This self-contained heating system uniformly warms product, reducing the risk of cold spots. When product is simmering, solid-state temperature controls maintain temperatures within a 1-degree-Fahrenheit range for best results.

Kettle contents are mixed and scraped with the Cleveland TMKEL100T mixer kettle's agitator and scraper, which helps distribute heat while achieving desired consistencies. To accommodate different volumes and product types, the agitator's speed can be adjusted from 0 to 320 rotations per minute and the scraper can rotate as many as 40 times around the kettle per minute. Safety mechanisms prevent high-speed starts and continuous mixing when the bridge is lifted. To reduce the risk of overexertion during pouring, it features a self-locking tilt mechanism that's supported by roller bearings; product drains via the large pouring lip. Liquid items, such as broth, can be removed with the 2-inch-diameter tangent draw-off valve.
