The Cleveland TMKEL40T electric mixer kettle's self-contained steam jacket, agitator, and scraper work alongside one another to distribute heat and mix product uniformly for desired results. Its twin kettles are encased in 2/3 steam jackets filled with treated water that doesn't require venting or refilling. The agitator and scraper blend product to desired consistencies and remove buildup from jacketed interiors. To accommodate different products, the agitator's speed is adjustable from 0 to 320 rotations per minute, while the scraper's speed also can be modified from 0 to 40 rotations per minute. To minimize splattering and user injury, mixing begins slowly and automatically stops when the unit's mixer bridge is raised.

Prior to serving, product temperatures are maintained by solid-state temperature controls, which keep temperatures within a 1-degree-Fahrenheit range of the intended temperature. Each Cleveland TMKEL40T electric mixer kettle has a 40-gallon capacity; they include a self-locking tilting mechanism to streamline product removal from its large pouring lip. Near the bottom of both kettles, 2-inch-diameter draw-off valves expel liquids and broths as needed. To add water, hot and cold water faucets are on the unit, and gallon markings stamped into the scraper shaft offer accuracy. For long service life, its exterior has a rust-resistant stainless steel construction, while the interior is lined with 316 stainless steel that defends against damage from acidic products. Designed to be bolted to the ground with its flanged feet for secure operation, this unit measures 99 inches wide by 39 inches deep by 57 3/4 inches high.
