For a long service life in bustling kitchens, this Cleveland TMKEL80T electric mixer kettle's exterior is made of rust-resistant stainless steel, while the kettles' interiors are lined with 316 stainless steel, which defends against damage from highly acidic product. Equipped with twin kettles, each holding 80 gallons of product, this unit is designed for high-capacity loads. Overall, it measures 113 inches wide by 46 inches deep by 60 1/4 inches high and is supported by adjustable, flanged feet that should be bolted down to the ground to ensure stability throughout operation. Because of their heavy construction, the kettles use a self-locking tilting mechanism and roller bearings to simplify pouring. Also, a 2-inch draw-off valve near the bottom of each kettle can be used to drain away soup and broth liquids.

The Cleveland TMKEL80T mixer kettles are surrounded by a 2/3 steam jacket filled with treated water for even heating. For low maintenance, the water doesn't require refilling or venting. Hydraulic-powered agitators and scrapers blend product to the desired consistency while dispersing heat, minimizing the risk of cold spots. Depending on product consistency, the agitator and scraper speed can be adjusted from 0 to 320 rotations per minute and 0 to 40 rotations per minute, respectively. Once product is mixed evenly, heat is maintained within a 1-degree-Fahrenheit range by the solid-state temperature controls.
