The Accutemp E64803D140 Evolution™ convection steamer is a countertop unit with a six-pan holding capability. It achieves quick cook times with its patent-pending Steam Vector Technology, which uses no moving parts. This unit comes with a cook mode and variable temperature hold mode. The digital temperature display is equipped with comprehensible digital controls, and the independent digital electronic timer is equipped with a programmable preset. It has a 3-gallon water reservoir without water or drain lines, and no requirement for water filtration or treatment. This unit's drain valve is front mounted and does not require scheduled de-liming or maintenance. The heavy-duty, field-reversible door can be opened throughout the cooking cycle. Its cast aluminum heating element shields it from water exposure, preventing damage.

This Accutemp E64803D140 connectionless steamer's cavity is constructed of reinforced and durable 14-gauge, 304 stainless steel. The control panel is easy to clean, and it is equipped with automatic altitude compensation. There are both English and Spanish operating instructions on the door. The one-piece wire pan racks, SVT steam collector, and distributor panels are all safe to clean in a dishwasher. It has an easy-access panel to simplify maintenance. There are indicator lights for high water, low water, and overtemp. It has efficient heat transfer, meaning even frozen vegetables can be thoroughly cooked in a matter of minutes, and the natural stirring motion that occurs as steam circulates through the cabinet boosts product cook times.
