The Alto-Shaam 1000-UP heated holding cabinet can heat many food types, whether rolls, poultry, casserole, or potatoes. It also can function as a proofer, so dough can rise before it bakes in the oven. Its Halo Heat® system evenly spreads heat throughout the cabinet, warming food without cooking it. Insulation traps heat inside the two sections and separates them, enabling two different foods to be warmed at one time. The temperature in each section can be adjusted by up and down arrow keys, and the current selection is viewable on the digital display screen.

After powering on, this Alto-Shaam 1000-UP food warming cabinet begins heating to the selected temperature. Because it is mounted on casters, this unit can be wheeled to the food and loaded. Eight full-size sheet pans fit onto the racks in each section. Users can then close the doors, which stay closed with magnetic latches.
