The Alto-Shaam CS-200 hot carving shelf features a recessed heated surface to help retain juices and keep the surrounding area clean. A fixed infrared lamp assembly provides additional surface heat and consistent holding temperatures. The three-position toggle switch offers low, medium, and high heat settings for flexible use in buffet lines, display stations, or carving setups. To support sanitation and usability, the unit includes a removable NSF- and USDA-listed cutting board with an integrated gravy lane. Built of 18-gauge stainless steel, the shelf is designed to rest on Cook & Hold ovens, heated cabinets, smoker ovens, or other countertop surfaces.
