Built for commercial kitchens, the Blodgett HVH-100G SGL full-size convection oven features a single-deck design with a stainless steel exterior and a 304 stainless steel coved interior, ensuring durability and resistance to corrosion. Its welded angle-iron frame enhances structural stability, while 21/2-inch blanket insulation helps retain heat for consistent cooking. The simultaneous split-door design includes two dual-pane tempered glass doors with a curved handle, limiting heat loss while providing visibility into the cooking chamber. Five stainless steel racks accommodate multiple sheet pans, while two xenon interior lights illuminate the cavity for monitoring progress. To simplify cleaning, the oven cavity drain and side-mounted hand shower provide convenient access to remove debris.
Powered by natural gas, the Blodgett HVH-100G SGL gas convection oven utilizes three inshot burners and direct spark ignition, producing 60,000 BTU for efficient operation. Its hydrovection and hot-air cooking modes, supported by a four-speed auto-reversing fan motor, promote even heat distribution. Operators can manage up to 500 recipes with the one-touch touchscreen controller, use the integrated rack timer, and maintain HACCP records. Additional features such as the thermostatically controlled quench system, vent cavity control, and a 4-inch removable fillet core temperature probe enhance precision and performance. The unit stands on 25-inch adjustable stainless steel legs, ensuring stability in high-volume kitchens.
