Because it's a direct-steam system, it can be used in kitchens with steam generators or external boilers that supply steam pressure between 5 and 45 PSI to fill the steam jacket for heating. This steam jacket encases two thirds of the kettle and provides an even heat distribution to eliminate cold spots and reduce the risk of overcooking. To cook various products, users can alter steam flow using the trunnion-mounted steam control valve, which is designed for right-hand use.
