Because it's a direct-steam unit, the Cleveland SD-1600-K1212 steam kettle must be attached to an external boiler for use. The two 12-gallon kettles operate with two-thirds steam jackets to cook pasta, soup, and chili evenly. Hot and cold water can be dispensed into each kettle using a swinging double faucet on the cabinet. The modular cabinet stand features a full-width drain trough and a sliding drain pan to facilitate cleaning. A splash shield also is included to reduce messes further.

The Cleveland SD-1600-K1212 tilting kettle includes a balanced, manual tilting mechanism to retrieve and serve product. Factory installed, the steam control kits include a condensate strainer, steam control valve, steam strap, check valve, nipples, and fittings. This unit is made of durable stainless steel with a 316 stainless steel interior that doesn't rust or corrode with extended use. To add ingredients and monitor the cooking process, the kettles are equipped with lift-off covers.
