For cooking large batches in high-volume operations, the Groen D-40 tilting kettle has a 40-gallon capacity that operates with direct steam, which means the unit needs to be piped to a remote steam source, providing it with steam that is controlled by an inlet valve. By adjusting the inlet valve, operators can dictate how much steam comes to the unit and the heat level. This unit is two-third-jacketed, so steam travels two-thirds of the way up the kettle from the bottom, and with steam at this level, it saves power and water compared to full-jacketed units, though it does not heat as evenly.

Because the Groen D-40 direct steam kettle tilts, it efficiently empties cooked product into a separate container. It tilts manually with a hand crank, and while this option is more economical, it is not as smooth or precise as power tilting. As the kettle is tilted and product moves toward the rim, it is directed into a container by a butterfly-shaped pour lip, and the rim is reinforced to prevent denting that could alter the steam pressure. A faucet bracket comes with the unit for mounting separately sold faucet, which can provide a constant supply of hot or cold water.
