Groen D-60 60 gal Steam Kettle - Manual Tilt, 2/3 Jacket, Direct Steam
The Groen D-60 tilting kettle has a 60-gallon capacity for high-volume applications. With a 316 stainless steel interior, it is highly resistant to corrosion, so it is best for acidic, tomato-based food. This kettle operates with direct steam, meaning it needs to be piped to a remote steam source, and steam flows into the unit through an adjustable inlet operators ensure can reach an ideal heat level. Steam kettles can either be fully jacketed or two-thirds jacketed, and this unit has a two-third jacket. With this design, steam only covers the bottom two-thirds of the kettle, saving power and water, though it can create an uneven heat transfer.
A manual hand crank is integrated into this Groen D-60 direct steam kettle, tilting the kettle so operators can efficiently remove its contents. Manually tilting is more economical than power tilting, though it can be more jerky and lead to spills. When the operator stops rotating the hand crank, the kettle self-locks into place, while the pour lip on the rim directs product into a separate pan. Reinforced for strength, the rim avoids denting, preventing it from altering steam pressure.
