While infrared light warms it from above, the base warms food from below. To ensure consistent temperatures, the infrared light focuses on the base edges, where it is coolest. Incandescent lights shine on the base, grabbing customer attention. For protection, a sneeze guard blocks coughs and sneezes on the customer side so foods stay fresh, and this unit is constructed of sturdy metal with durable, metal-sheathed elements.
