The hinged stainless steel cover fitted to the top of the Hoshizaki SR27B-8 sandwich and salad prep table assists with food safety. Its simple open-and-close configuration permits operators to contain cold temperatures inside during downtime while protecting the display from contaminants. This unit can hold a total of eight sixth-size pans designed to contain most meats, fruits, vegetables, and other varieties. Meanwhile, the ¹/₂-inch-thick cutting board mounted on the surface in front of the prep table provides the necessary space to make customized, thick sandwiches, quesadillas, and tacos. The cutting board's durable polyethylene body reduces abrasions from contact with sharp-edges knives, providing a design that focuses on longevity.

A forced-air design facilitates the pans to help maintain food safe conditions. Additionally, the cabinet is built with a cabinet temperature control dial with a one to seven range€”seven being the coldest. Users can monitor the cabinet's conditions with a thermostat. This prep table's refrigerated base offers a control setpoint range from 32 to 52 degrees Fahrenheit; its efficient design can withstand kitchens with ambient temperatures from 45 to 100 degrees Fahrenheit. This prep table's capillary tube system uses R290 hydrocarbon refrigerant for cooling, while the built-in, time-initiated defrost system ensures the epoxy-coated evaporator doesn't freeze or corrode.

The Hoshizaki SR27B-8 prep table measures 27 inches wide by 31 inches deep by 44¹/₄ inches high and is mounted on 6-inch casters for mobility. The base is supplied with a heavy-duty door featuring a simple stay-open design at a 90-degree angle. Once this reach-in, one-section design's interior is accessed, it provides a 7.21 cubic-foot capacity capable of holding one adjustable shelf. This shelf remains supported with an anodized aluminum shelf support pilaster that's adjustable in ¹/₂-inch increments.
