This griddle sits on four 4-inch legs, offering enough space between its underbelly and the counter for proper ventilation. The grooved griddle plate is 72 inches in width by 24 inches in depth, providing ample space for juicy tuna steaks or tender mushroom skewers, finishing them with prominent grill marks. Aeration baffles are included in the structure to grant heat disbursement and increased production for smooth services.

To maintain these large orders, the Imperial IGG-72 griddle operates through an instant ignition, sending a strong, constant supply of heat to the surface. It has a 6-burner heating element, each burner spaced out by 12 inches, and functions with thermostatic controls so that cooks can set a specific, numerical temperature. Grease is collected in the detachable can and gutter, streamlining cleanup and maintaining cooking efficiency. Additionally, the knobs on this griddle are constructed of a break-resistant material and most of this machine is stainless steel for simplified cleaning.
