Measuring 20 inches by 16 inches, the John Boos EPT6R5-3072GSK-L-X prep table's sink can accommodate a half-size sheet pan or hold a two-thirds hotel pan full of product as it defrosts. Since it's 12 inches deep, users can rinse and drain large batches of ingredients simultaneously to expedite the preparation process. After draining, ingredients can be moved directly to the worktop for processing, eliminating the need to move them across the kitchen to another location.
