With its 60-inch width, the John Boos UFBLG6018 economy work table provides a large surface for operations that use manual prep techniques. The 18-gauge 430-series stainless steel top is more economical than thicker 14- and 16-gauge options, so it works best for chopping and dressing product by hand. A 1¹/₂-inch upturn edge on the rear keeps messes confined to the worktop, and the front's stallion edge reduces sharpness that could be uncomfortable for working. The side edges are turned down 90 degrees, so they can be placed flat against walls. The unit's base has an undershelf for supplies storage and bullet feet that stabilize the unit on surfaces that aren't level.
