The Metro C517-PFC-U non-insulated mobile proofing cabinet can accommodate (14) 18-inch by 26-inch pans or (26) 12-inch by 20-inch pans of food at a time. It's designed with universal wire slides that can be adjusted in 1¹/₂-inch increments to fit various pan depths. Users can adjust the recessed analog controls to change the temperature and humidity settings independently from one another, and the unit's digital display provides a good way to monitor the changes. Mounted on the bottom for accessibility, the proofing control module can be removed for replacement or upgrade without requiring the use of any tools.

For additional security, the Metro C517-PFC-U non-insulated mobile proofing cabinet's door is protected with high-strength polymer latches that use magnetic function. Resting on heavy-duty hinges, the door can be opened as far as 180 degrees to enable complete user access, and the hinges are reversible to suit any floor plan. To catch drips and contain mess, the unit is designed with a catch pan and drip trough made of smooth polymer.
