The Metro C519-CFC-L heated holding and proofing cabinet is great for holding hot foods for catering or proofing dough before baking. By flipping a switch on the control module, users can use the cabinet for holding or proofing, and each mode has its own analog controls for temperature and humidity levels. Heat-up is quick, and heat recovery is achieved with the thermostatically controlled, forced-air heating system. The clear, full-length polycarbonate door keeps heat inside the cabinet while enabling food monitoring. The high-temperature, Santoprene gasket mounted on the door keeps heat from escaping the cabinet.

This cabinet has lip-load, extruded aluminum pan slides that can hold35 full-size sheet pans on 1¹/₂-inch increments. The control module is easily removable without tools, which eases interior cleaning. Recessed control dials are less susceptible to damage from passing traffic. This unit includes an easily read digital thermometer, a master on/off switch, power indicator lights, and a ball-bearing blower forced-air system. The 5-inch casters have nickel-plated hubs and neoprene treads for smooth transportion of the Metro C519-CFC-L heated holding and proofing cabinet.
