The Metro C519-PFC-L full-height heating cabinet isn't insulated, meaning it's best suited for short-term applications that don't require food to be moved across large distances. Proofing cabinets are used in venues that produce lots of baked goods, such as croissants, cinnamon rolls, brioche, and pizza dough. This cabinet can hold 35 pans of food at one time and accommodates large volumes of product without occupying too much floor space.

This lightweight aluminum Metro C519-PFC-L non-insulated proofing cabinet reduces arm strain when users relocate it. To facilitate smooth movement, the cabinet rests on 5-inch casters, two of which have brakes. Operating with a thermostatically controlled forced-air system, the cabinet maintains warm temperatures and provides fast recovery time after the door is opened to add or remove product. This proofing cabinet features lip-load slides on 1¹/₂-inch centers and has a clear polycarbonate door that doesn't block the view of dough inside.
