It quickly heats up and recovers temperatures with its thermostatically controlled forced convection system, preventing lags in operation. To ensure temperatures don't fluctuate, it's made with high-density polyethylene Insulation Armour?. The bottom-mount control module includes a digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. For cleaning and maintenance, this control panel is removable.

Made of aluminum, the Metro C533-MFC-U heated holding and proofing cabinet's interior has universal wire slides that can be adjusted in 1¹/₂-inch increments. The cabinet holds five 18-inch by 26-inch pans or (10) 12-inch by 20-inch by 2¹/₂-inch pans. To help users access product, its fully insulated door swings out and has a clear polycarbonate structure that ensures product is readily visible. Its 27⁵/₈-inch-wide by 31¹/₂-inch-deep by 32-inch-high structure is furnished with 3-inch casters that help users move the unit smoothly and stabilize it in place.
