For maximum temperature retention, the Metro C533-MFS-U-GY C5? 3 Series moisture heated holding and proofing cabinet uses a thermostatically controlled forced convection system that heats up and recovers heat swiftly. The thermostat can be adjusted between 80 and 200 degrees Fahrenheit, and operators can control the moisture settings at lower temperatures for a prime proofing environment. The polycarbonate door is fully insulated to provide users a clear view of product while preventing temperature fluctuations. Insulation Armour? is built into the cabinet to ensure temperatures remain consistent over time while keeping the exterior cool to the touch for user safety.

The Metro C533-MFS-U-GY heated holding and proofing cabinet's aluminum interior has excellent heat retention and is equipped with adjustable universal wire slides on 3-inch centers. It has a capacity of five 18-inch by 26-inch pans or (10) 12-inch by 20-inch by 2¹/₂-inch pans to accommodate high-volume loads. Intended for undercounter installation, it measures 27.63 inches wide by 31¹/₂ inches deep by 32 inches high. Casters are built onto the bottom of the unit, facilitating smooth movement and stability as needed, and to endure daily, heavy-duty use, its gray exterior is comprised of stain-, dent-, and impact-resistant polymer.
