Universal wire slides are secured on 3-inch centers in the Metro C533-MFS-U C5? 3 Series moisture heated holding and proofing cabinet's interior. They can be adjusted in 1¹/₂-inch increments and hold five 18-inch by 26-inch pans or (10) 12-inch by 20-inch by 2¹/₂-inch pans. A fully insulated polycarbonate door protects the pans from temperature fluctuations, and the unit is made with Insulation Armour?, which keeps temperatures consistent without warming the unit's exterior. Operators can adjust temperatures between 80 and 200 degrees Fahrenheit to accommodate warming and proofing applications, and at lower temperatures, users can adjust moisture levels for an optimal environment for rising dough.

Meant for undercounter installation, the Metro C533-MFS-U holding and proofing cabinet is 27⁵/₈ inches wide by 31¹/₂ inches deep by 32 inches high. It's also furnished with 3-inch casters to facilitate smooth maneuverability, while molded-in handles improve user control. Comprised of a stain-, dent-, and impact-resistant polymer, its red exterior can be used in color-coded systems to prevent cross contamination. Its bottom-mounted controls, including recessed dial controls and a master on/off switch, are removable for cleaning, maintenance, and upgrades.
