This Metro C535-CFC-L C5? 3 series insulated mobile cabinet combines heat and humidity to keep food hot, moist, and flavorful for serving. To accommodate changing inventory, users can adjust the temperature between 80 and 200 degrees Fahrenheit and monitor temperatures with the easy-to-read digital thermometer display. For foods that tend to dry out during holding, operators can modify the cabinet to produce 95 percent humidity when it's set to 95 degrees Fahrenheit. This unit uses a forced convection system to heat and recover quickly for reduced lag times. Its bottom-mounted control panel features recessed control dials, a power switch, and power indicator lights, and it's removable without tools for simplified cleaning and upgrades. Inside the unit, its extruded aluminum lip-load slides are situated on 1¹/₂-inch centers and accommodate (17) 18-inch by 26-inch sheet pans.

To retain heat, save energy, and maintain a cool surface through heating, the Metro C535-CFC-L heated holding and proofing cabinet is lined with Insulation Armour??high-density polyethylene (HDPE). Operators can see through the full-length polycarbonate front door to monitor holding, and it opens directly to the pans to streamline loading and retrieval. Its durable polymer construction resists dents, impacts, and stains, while its red exterior is great for color-coded applications. As a half-height unit, this cabinet measures 27⁵/₈ inches wide by 31¹/₂ inches deep by 44 inches high and is furnished with four 5-inch casters—two of which have stabilizing brakes. For controlled steering between the kitchen and serving space, users can grip the hand holds molded into the four corners.
