The Metro C535-HLFS-U C5? 3 heated holding and proofing cabinet has three control modules: holding for high temperatures without moisture control, moisture for hot holding and proofing with moisture control at any temperature, and combination for hot holding and proofing with moisture control at lower temperatures. For facilitated upgrading and cleaning, each of these controls can be removed without tools.

Designed with the capacity for eight 18-inch by 26-inch pans or (16) 12-inch by 20-inch by 2¹/₂-inch pans, the Metro C535-HLFS-U insulated mobile heated cabinet measures 27⁵/₈ inches wide by 31¹/₂ inches deep by 44 inches high. This piece of equipment's casters enable mobile applications, and two of the casters include brakes for stationary use.
