The Metro C539-CDS-4 C5? 3 Series full-height, mobile heated holding cabinet accepts 18 full-size sheet pans or 34 full-size hotel pans. It accommodates pans on fixed wire slides that are welded on 3-inch centers. Constructed of red, high-density polyethylene, the unit is durable and resists stains, dents, and scratches. Insulation keeps heat inside the cabinet while ensuring the exterior stays cool to the touch. The solid Dutch doors enable operators to access the interior in two sections to prevent heat from escaping quickly.

This Metro C539-CDS-4 heated holding cabinet is a combination unit that can hold food and proof dough. It has higher temperatures without moisture for holding and lower temperatures with moisture for proofing. It operates from 80 to 200 degrees Fahrenheit, and at 95 degrees Fahrenheit, the machine has 95 percent relative humidity. Mounted on the bottom, the control module can be removed for cleaning or system updates. The thermostat is digital and easy to read, while the control dials are recessed to protect them from damage.
