Universal slides in the Metro C539-CFS-U full-height, mobile heated holding cabinet accommodate 18 full-size sheet pans or 34 full-size hotel pans. The slides are adjustable in 1¹/₂-inch increments to accommodate different types of product. Its high-density polyethylene construction provides strength that supports high-volume operations. Insulation in the unit retains heat, reducing energy consumption and keeping the exterior cool to the touch.

Designed for holding and proofing, the Metro C539-CFS-U insulated heated holding cabinet has high temperatures for holding, with low temperatures and humidity for proofing. These temperatures are easy to read on the digital thermostat and are controlled with recessed dials on the bottom-mount control module. This module is removable, so operators can update the control system or simplify cleaning.
