The universal wire slides built into the Metro C569-SDS-U C5? 6 series heated holding cabinet accommodate (17) 18-inch by 26-inch sheet pans or (32) 12-inch by 20-inch by 2¹/₂-inch steam pans to support high-volume holding. Each nickel-chrome wire slide is adjustable by 1¹/₂ inches; stainless steel vertical uprights stabilize them in place. Solid, double-panel, fully insulated Dutch doors are built into the front of this reach-in, full-height unit so operators can access the top and bottom sections separately, minimizing temperature fluctuations. The cabinet's interior and exterior are made of stainless steel that resists corrosion and ensures durability. For maneuverability, its 29¹/₈-inch-wide by 32⁵/₈-inch-deep by 74³/₄-inch-high structure is furnished with 5-inch neoprene casters.

The Metro C569-SDS-U holding cabinet's thermostatically controlled, ducted heating system heats the cabinet's interior and recovers lost temperatures quickly. This system produces and maintains temperatures between 70 and 200 degrees Fahrenheit, and the interior is lined with 2¹/₂-inch-thick, high-density fiberglass that preserves temperatures. Operators can adjust temperatures quickly with the top-mounted temperature controls, and its analog thermometer provides a constant temperature readout, even when the unit is unplugged. To retain food's original texture, the unit's integral water pan system introduces passive humidity that can keep foods from becoming dry.
