To streamline pan loading and retrieval, this Metro C569-SFC-UPFS C5? 6 series heated holding cabinet features a pass-thru design that enables operators to access pans from the front or back. The full-length, clear tempered glass front door provides a direct view of product, while the solid stainless steel back door is insulated to help minimize temperature fluctuations. Inside the cabinet, universal wire slides accommodate 34 steam pans or 18 sheet pans, and the slides can be adjusted in 1¹/₂-inch increments. Engineered to withstand long-term, high-volume use, the interior is made of 22-gauge stainless steel, while the exterior has a polished, 20-gauge stainless steel construction. This full-height cabinet measures 29¹/₈ inches wide by 34⁵/₈ inches deep by 74³/₄ inches high.

The Metro C569-SFC-UPFS holding cabinet's ducted heating system maintains temperatures between 70 and 200 degrees Fahrenheit and recovers lost temperatures quickly. Because the cabinet's interior is insulated with 2¹/₂-inch-thick, high-density fiberglass, food can be held at consistent temperatures, even when the doors are opened for short periods of time. To ensure foods don't become dry during holding, an integral water pan system adds passive humidity into the cabinet. Top-mounted temperature controls are user friendly, and the analog thermometer displays temperatures constantly, even when the unit is unplugged.
