It's mounted on four durable, 5-inch casters—two with brakes—that facilitate maneuvering. Its reach-in layout features a solid, fully insulated door that helps preserve internal temperatures after it's been opened for short periods of time. Inside the cabinet, lip-load slides support (17) 18-inch by 26-inch sheet pans, and the slides are secured on stainless steel vertical uprights.

The Metro C585-SFS-L temperature holding cabinet's digitally controlled ducted heating system produces temperatures between 70 and 200 degrees Fahrenheit and reduces heating and recovery times to accommodate successive uses. The solid-state controller's closed-loop monitoring mechanism enables operators to control the cabinet's internal environment, and all temperature controls are top-mounted to reduce the risk of accidental temperature adjustments. If the temperature drops unexpectedly, a low-temperature alarm alerts operators. The unit's recall and memory controls enable users to program settings for common dishes, while an integral water pan system adds passive humidity, preventing product from becoming dry when held at high temperatures for long or short periods of time.
