The Metro C585-SFS-UPFS C5? 8 series holding cabinet's pass-thru layout grants access to the front and back of the unit to simplify pan insertion and removal. The front and back doors have a solid, fully insulated construction that helps retain temperatures when they're opened for short periods of time. Both the interior and exterior are made of 304-series stainless steel—a rigid metal that resists rust and corrosion to accommodate long-term use. Inside the cabinet, universal wire slides can hold (8) 18-inch by 26-inch sheet pans or (16) 12-inch by 20-inch by 2¹/₂-inch steam table pans. Overall, this half-height unit measures 29¹/₈ inches wide by 34⁵/₈ inches deep by 44³/₄ inches high.

For precise temperature tracking, solid-state controls use continuous closed-loop monitoring to gauge the Metro C585-SFS-UPFS controlled temperature holding cabinet's interior temperatures. A digital temperature readout is displayed on the top-mounted controls. To streamline operation and ensure product is held at the correct temperatures, the controls include a memory recall button and low-temperature alarm. The digitally controlled ducted heating system produces cabinet temperatures between 70 and 200 degrees Fahrenheit, and to support back-to-back use, it recovers lost temperatures quickly. To prevent foods from drying out in warm temperatures, an integral water pan system can be used to introduce passive humidity, which helps improve food quality.
