To ensure prepared product is stored in food-safe conditions, the solid-state controls monitor temperature fluctuations and use a low-temperature alarm to notify the operator of changes. Users can adjust the temperature with the top-mounted controls and save specific settings with the recall and memory button. Because some foods tend to dry out when exposed to warm temperatures, this unit includes an integral water pan system, which creates passive humidity inside the cabinet.
