Ideal for high-volume holding applications, the Metro C587-SFS-U C5? 8 series controlled temperature holding cabinet's adjustable universal wire slides can accommodate (13) 18-inch by 26-inch sheet pans or (26) 12-inch by 20-inch by 2¹/₂-inch steam pans. The cabinet's ducted heating system generates and maintains temperatures between 70 and 200 degrees Fahrenheit to support a wide range of prepared foods, and operators can integrate a water pan system to produce passive humidity inside the cabinet. The unit's interior and exterior are made of durable, corrosion-resistant stainless steel to withstand long-term use, while its reach-in design streamlines pan retrieval and loading. It is a ³/₄-height model and is mounted on 5-inch casters for maneuverability.

To ensure product is held at the correct temperatures, a solid-state controller built into the Metro C587-SFS-U holding cabinet uses a continuous closed-loop monitoring system to track and display temperatures. Operators can adjust temperatures via the top-mounted controls, and if temperatures drop unexpectedly, an alarm notifies the operator. The ducted heating system recovers heat quickly, and the cabinet is insulated with high-density fiberglass to minimize fluctuations in cool environments.
