Its heating and humidity systems use ducted air to create gentle, convective airflow for consistent, uniform results. With the intuitive 6.8-inch touchscreen, operators can modify temperatures and humidity levels, preset recipes, program timers, and manage temperature and water levels.

The Metro C595-SFS-L heated holding and proofing cabinet's lip-load slides accommodate (17) 18-inch by 26-inch pans—ideal for low- and medium-volume holding—and are situated on 1.5-inch stainless steel uprights. Because it's furnished with casters, this half-height 30-inch-wide by 36.38-inch-deep by 44.75-inch-high unit is simple to transport. Its built-in polymer handles facilitate steering, while the stainless steel exterior and polymer bumper withstand collision impacts. To preserve heat during transport, its perimeter is insulated with 2.5-inch-thick high-density fiberglass insulation, and its solid door is lined with 1-inch insulation.
