For products with various holding requirements, this Prince Castle DHB2PT-27B dedicated holding bin features two cavities with six independently controlled heating systems. These top and bottom heaters can be adjusted from 150 to 260 degrees Fahrenheit, and Reli-A-Temp? infrared heater technology holds food at consistent temperatures to prevent overcooking. Because this system disperses heat uniformly across the holding areas, it reduces the risk of temperature fluctuations. To simplify management, its MenuTrak food supervisory system identifies contents, monitors holding timers, and provides alphanumeric displays for each pan. Operators can also program as many as six menus into this system.

The Prince Castle DHB2PT-27B freestanding warming drawer's cavities accommodate three dual-handle third-size pans, which are included. Lids encase all the drawers to preserve moisture for foods prone to drying out during holding, such as hamburgers and grilled chicken. Its pass-thru configuration can connect a prep area to a kitchen for streamlined operation, and because the pans have two handles, operators can grab them from either side. This 27¹/₅-inch-wide by 14¹/₁₀-inch-deep by 11¹/₁₀-inch-high countertop unit is made of durable, corrosion-resistant stainless steel and aluminum.
